Turkey, avocado, tomato salsa and chipotle Tacos

This is an amazing way to use up leftover turkey meat. The chipotle adds a smokiness and the salsa is so fresh and flavourful!

Ingredients
12 x 15cm Soft Flour tortilla
200g Cooked turkey, shredded
3 x Fresh plum tomatoes, diced
1 x Red Onion, diced
3 x Red Chilli, diced
2tsp Chipotle paste
100ml Mayonnaise
1 x Lime Juiced
Bunch Coriander, chopped
Salt and pepper to taste
1 pinch Dried oregano
1 pinch Ground cumin, or more to taste
2 x Avocado, mashed
Instructions
Chop the tomatoes, chili and onions.
Place in a serving bowl. Add salt and pepper to taste and 1 tsp of chipotle paste, the cumin and the dried oregano.
Fold through the chopped coriander.
Let the salsa sit for an hour for the flavours to combine.
Mix the mayonnaise with the remaining 1 tsp of chipotle paste.
Meanwhile remove the avocado from its shell and mash together with the lime juice and salt and pepper.
In a hot pan, heat the flour tortillas, fill them with the turkey, avocado mix, salsa and top with chipotle mayonnaise.
