Quick pickled strawberries

Great in salads, with cheese or desserts, this super quick pickle is a lovely way to use up stray strawberries.

Ingredients
Strawberries - we used around 250g
100 ml red wine vinegar
2 tbs sugar
1 tsp pink peppercorns
A few sprigs of fresh mint
Instructions
Put sugar and vinegar in a pan and gently heat until the sugar is dissolved.
Crush the peppercorns, then add them to the pan along with the mint.
Remove from the heat and let the mixture cool a little.
Pour the pickle mixture over the strawberries. We quartered the berries as they were quite big.
Leave for 20 minutes.
Pickle done!
