Pomegranate glazed red cabbage

The perfect side dish to liven up your roasts – fact! This would go banging with lamb for your Sunday lunch, or indeed for a vegetarian/vegan mezze. I love this recipe not only because it’s simple, not only because I love red cabbage, not only because it tastes amazing – but because there is no waste! Every part of the cabbage is used. The zenith of Compleating.

Top tip: The recipe can be doubled easily to feed more people. @kitchenclonc

Ingredients
2 tbsp rapeseed oil
1/2 red cabbage sliced
2 tbsp pomegranate molasses
Couple of pinches of fine sea salt
Instructions
Roast the sliced cabbage in a large roasting tray coated in the oil and salt for 20 minutes at 200°C
Remove from oven and coat with the pomegranate molasses. Mix well.
Roast for a further 10 minutes.
Serve
