Parmesan Crusted Rooster Potatoes

A simple recipe from Albert Bartlett to make the most of your spuds. Best made with all rounder potatoes.

Ingredients
3 large cubed Rooster Potatoes
1 tsp Canola oil
½ tsp Italian seasoning
60g grated parmesan cheese
½ tsp (or to taste) Salt
Instructions
Preheat oven to 200° C /400° F / Gas Mark 6.
Add all ingredients and potatoes into a bowl. Mix well.
Place on baking sheet and bake for 20 minutes until golden brown. Do not turn or the parmesan won't create a crust.
Add a dipping sauce of sour cream and chives for additional flavour.
