Chicken Kiev

This famous dish from Ukraine is a popular family staple and a tasty way to revitalise chicken and use up any bread past its best.

2 chicken fillets
40g Butter
100g of plain flour
2 cloves of garlic
Dill to taste
Pinch of ground white pepper
Pinch of salt
2 eggs
150ml of sunflower oil
100g of bread for breadcrumbs
Using a sharp knife cut a deep pocket in your chicken breast while not cutting through to the other side of the meat
Dice the garlic and mix with the softened butter and dill
Spoon the butter mixture into the middle of the chicken and press flat and seal with your hands
Season with salt and pepper and repeat for the other fillet
Beat the eggs and dip the fillet in the mixture
Then cover the fillet in flour and finally in the breadcrumbs until fully coated
Place the chicken in the frying pan with the heated oil to brown off
After the chicken has been fried on all sides place it on a baking tray
Cook for 15 mins in the oven at 180 degrees for 20 minutes to cook the meat through
