Semolina isn't always the easiest thing to find in your local supermarket but it is worth hunting it down for this delicious Ukrainian dessert. Traditionally eaten cold, we think a slice of this would be ideal on a sunny evening.
250g Cherries (fresh or frozen)
150g White bread (stale)
1 teaspoon of vanilla essence
30g Ground almonds
Butter for greasing the tin
Pinch of salt
2 teaspoons icing sugar
Bring the milk to the boil and add the salt, ground almonds, sugar, butter and semolina. Stir occasionally until the mixture thickens.
Grind the bread into breadcrumbs and add along with the eggs to slightly cooled semolina mixture and stir.
Remove the stones from the cherries and stir half of them into the semolina mixture.
Line a medium sized cake tin with butter and grease proof paper and pour the semolina batter in.
Place the remaining cherries evenly on top.
Bake for 30 mins in the oven at 180C. The top should look golden.
Once cooled, sprinkle with the icing sugar.
