Apple Cinnamon Oat Muffins

Bake these muffins for a tasty treat or an on-the-go breakfast!

Ingredients
2 apples
2 eggs
1 cup yoghurt
1/3 cup honey
2 tsp vanilla
21/2 cups oats
2 tsp baking powder
Pinch of salt
1 tbsp cinnamon
1 cup milk
Scottish blueberries or other toppings of your choice
Instructions
Peel and grate the apples
Break the eggs into a large mixing bowl and beat
Mix in the yogurt, honey and vanilla
Stir in the oats, followed by the baking powder, salt and apples
Pour in the milk and stir it all together
Get a muffin tin or baking tray and pop in some cases (reusable silicon ones are great!); fill each case with a good scoop of the mixture
Top each muffin with some in-season Scottish blueberries or strawberries, or try some dried cranberries or nuts
Bake in the oven at 350oF/175oC for about 35-40 minutes
