Quinoa salad with apple and grape

Grain-based salads are filling and nutritious, and work really well with fresh fruit, which adds colour, texture and taste.

Cook’s tip: Other grains can be used – try couscous or brown rice. Choose apples with a tart, fresh flavour and pretty green or red skins.

Variations: All kinds of fresh fruit work well in a grain-based salad – try a citrus variation with orange and grapefruit segments.

Extra flavour: A drizzle of pomegranate molasses is wonderful on this salad.

Vegetarians might like to add some crumbled feta cheese.

Ingredients
200g/7oz uncooked quinoa
2 apples
100g/3 ½ oz seedless grapes
Juice of half a lemon
2 tbsp olive oil
Instructions
Cook the quinoa according to the packet instructions, drain and chill.
Core the apples, slice them finely and sprinkle with lemon juice. Cut the grapes into halves.
Toss all the ingredients together and serve cold.
