Eggs are one of the most versatile ingredients in your kitchen. From frittatas to fry-ups, baking to boiling, they can be turned into something delicious for any meal. But sometimes, we may find ourselves with a couple too many.
Every day in Scotland, we throw away around 87,000 eggs, often because they’re close to their ‘best-before’ date. In fact, as long as you cook them thoroughly, eggs are safe to eat up to a couple of days past the date printed on the box, so you could still save them from the bin even if the date is creeping closer. A good way to prevent them from spoiling is to store them in the fridge, where they’ll stay fresher for longer.
